Live cooking with European lamb at Tinc Gana, Tokyo
On 5 March, a group of 18 top-level chefs from some of Tokyo’s most prestigious restaurants attended a private tasting event at Tinc Gana Restaurant. Organised within the framework of the Exclusive Lamb & Goat from Europe campaign, the event introduced participants to the premium qualities of European lamb and goat meat through a carefully designed live experience.

The session was led by Chef Jérôme Quilbeuf, who guided attendees through the preparation and tasting of three refined dishes featuring different cuts of European lamb. Each creation was tailored to the expectations of the Japanese fine dining sector, combining culinary precision with originality.
The tasting menu included a herb-crusted French rack with black garlic, a tournedó-style stew made with gigot and seasonal mushrooms, and a shoulder confit served with potato croquette and hijiki seaweed. All dishes were prepared on site, allowing guests to observe the techniques used and discuss the product’s performance in real time.
Sharing values through flavour and dialogue
The event also provided an opportunity to share the core values behind European lamb: sustainability, full traceability, and a balance between tradition and innovation. These principles were addressed throughout the chef’s presentation and reflected in the materials shared with the participants. There was a strong focus on how European lamb meets the demands of modern gastronomy, both in terms of taste and responsible sourcing.
A growing opportunity in Japan
Tokyo plays a key role in shaping culinary trends across Japan and beyond. By connecting directly with chefs working at the highest level, the event helped reinforce the positioning of European lamb as a high-quality, versatile, and sustainable option for premium menus. It also opened the door for future collaborations and greater visibility of European meat in a demanding and influential market.
Promotion programme to inform about the European Lamb and Goat sector
EXCLUSIVE LAMB & GOAT FROM EUROPE is a three-year promotion campaign supported by the European Commission and launched by two national lamb and goat associations with the main goal of raising awareness among sector professionals and consumers about the qualities of the European lamb and goat sectors.
