European lamb showcased at Musashino Culinary School
On 15 May 2024, the Exclusive Lamb & Goat from Europe campaign made a stop in Tokyo with a full-day event designed to connect with key professionals in the Japanese food sector. Hosted at the Musashino Culinary School, the event brought together 48 importers, distributors, and HORECA professionals to explore the culinary value of European lamb and goat meat through live cooking and guided tasting.
A full programme from kitchen to table
The day began with dish preparation and mise en place, led by Chef Miguel Ángel de la Cruz García, who designed a tasting menu focused on flavour, technique, and adaptability. From the early hours until the afternoon, the chef and team worked on-site to ensure every element of the dishes was cooked to perfection using European lamb and goat cuts.
In the late afternoon, professionals were invited to attend a Cooking Show Seminar, where Chef de la Cruz demonstrated three recipes live. Attendees had the chance to observe techniques, learn about the cuts used, and hear directly about the qualities that make European lamb stand out: its tenderness, rich flavour, and suitability for both classic and contemporary cuisine.
Tasting European lamb in context
Following the demonstration, participants joined a Business Tasting Party. The curated menu included a lamb churrasco sandwich with pickled vegetables, a lamb leg cannelloni with bay leaf cream, a lamb rack stew with mushrooms, and a dessert of roasted sheep’s milk with red berries. Each dish was introduced with comments on flavour profiles, preparation methods, and sourcing, helping attendees appreciate the product beyond the plate.
The tasting created space for informal exchanges, giving professionals the opportunity to discuss the potential of European lamb and goat meat within their businesses. The setting also helped reinforce the campaign’s message: that European lamb meat is a reliable, premium, and versatile product with a strong identity.
Building trust through quality and transparency
Throughout the day, the campaign highlighted key aspects of European meat production—traceability, strict animal welfare, and a long-standing commitment to sustainability and innovation. These values align with growing priorities in the Japanese market, especially among professionals working with imported premium ingredients.
Promotion programme to inform about the European Lamb and Goat sector
EXCLUSIVE LAMB & GOAT FROM EUROPE is a three-year promotion campaign supported by the European Commission and launched by two national lamb and goat associations with the main goal of raising awareness among sector professionals and consumers about the qualities of the European lamb and goat sectors.
